Pappardelles' Pasta makes it in Denver in batches of 100 pounds or less, by hand, following traditional Italian methods — the same way since 1984. Three things separate it from what's on the shelf:
Not all-purpose, not a blend. The hardest wheat there is — sourced from the same supplier since 1984 — is what gives pasta its amber color, nutty flavor, and the backbone to stay firm in the pot.
Dough labors through bronze instead of zipping through Teflon. The extra effort leaves a coarse, chalky surface that grabs sauce — and feels luxurious rather than slick on the tongue.
Commercial lines blast pasta dry in minutes, not hours. This is coaxed dry over two to four days in rooms built to mimic a Mediterranean breeze — which is how the flavor and nutrition stay in the noodle.
