Pasta Risottata

A simple method from your Kenosha Public Market Lazy Cook. In a few words: pasta noodles cooked like risotto, but using hot water rather than broth. Any noodles will work, but Pappardelles' Pasta have more flavor.

At the market, Curzio explains how he cooks his meals with pasta every day. Instead of a rigid recipe, the method uses a sport analogy: in a football game we have 4 periods. He cooks in 4 periods of 4.5 minutes.

Ingredients

  • 2 spoons olive oil
  • Garlic, onions, carrots, mushrooms, and other seasonal vegetables (prepped and ready)
  • Dry Pappardelles' pasta noodles (about 1 oz per person to keep carbs lower)
  • Hot water from a tea kettle
  • Meat optional: cook separately and add at the end of the 3rd period

The four periods

  1. Period 1: Put two spoons of olive oil in a pan at low–medium heat. Immediately start a stir-fry with garlic, onions, carrots, mushrooms, and other seasonal vegetables. Keep veggies ready so the oil does not overheat. In Italian this is soffritto (“sub-fried”): keep the oil temperature low, and keep a lid on the pan for vegetable steaming.
  2. Period 2: Add the dry pasta noodles on top of the steaming veggies. The noodles start cooking and flavors exchange. Meats are not recommended in the pan yet. Cook meats separately and add them at the end of Period 3.
  3. Halftime: Hot water is boiling in a tea kettle. Fill the pan bottom about half an inch.
  4. Period 3: Longer noodles (angel hair, linguine, fettuccine, tagliatelle) soften enough to stir into the vegetable broth. Keep the stove at medium. Add separately cooked meats at the end of this period if using.
  5. Period 4: Finish cooking. Noodles cook about 4 minutes without fluids, then about 8 minutes with hot water, for roughly 12 minutes total. Low-carb pasta needs about 2 minutes overtime.
